Mongra is the highest quality of Kashmiri saffron, consisting only of the deep-red tips (stigmas) of the flower, with no yellow styles or "tail" attached.
Place a thread in warm water. Pure saffron will slowly turn the water golden-yellow, while the thread itself stays red. If the thread turns white or the water turns red instantly, it is likely dyed.
Kashmiri saffron has a higher concentration of crocin (the colorant), giving it a deeper crimson hue and a more intense aroma.
Crush the threads gently and soak them in a tablespoon of warm milk or water for at least 15â20 minutes before adding to your dish.
Saffron is highly sensitive to moisture and light. Store it in a small, airtight glass vial inside a dark cupboard.
